First stop : The flavours of morning
We?ll start at the foot of the 12th century, roman-style steeple. Then there is the church, the chateau, the manor the small winding streets with their carved inscriptions on the walls and the ancient public laundry?so many lovely things to see. A beautiful way to start the day
Second stop : The freshness of Aligote
Aligoté is a variety of grape which gives its? name to a wine originating from Burgundy . There is very little of this grape in Savigny. It is known for its? light acidity and delicate aroma and of course, for being the wine used in making ?kir? (Aligoté and blackcurrant liquor).
Third stop : The subtlety of Chardonnay
We?ll stop in the cool undergrowth of the forest for a taste of Chardonnay. Very little of Savigny?s vineyards are planted with white wine grapes. A pity, as it is such a delight. The Chardonnay variety, a blend of Burgundy blanc and Savigny blanc, loves temperate climates and chalky and rocky soil. It makes a very balanced wine, full of aroma which takes on a lovely amber colour with age.
Fourth stop : The Birth of Wine
While tasting the wines today, use your imagination, try to feel and see?
the baskets of grapes?
the mystery ofboiling cauldrons?
the odor of fermentation that floats over the entire village?
the joy of the wine-growers?
Fifth stop : Cool and Fresh
The many springs surrounding our village provide the tap water of Savigny and 26 other communities and have done so for many years. Today, our water, even though considered ?natural? is not actually drinkable in its? natural state and I?m afraid I can only offer you bottled mineral water. What a shame.
Anecdote: The only volunteers I could come up with for this stop was a team of doctors!
Sixth stop : The Domain of Pinot noir
The appellations of Bourgogne rouge, Savigny village rouge and Savigny 1ere cru are all made from one grape; Pinot noir. The transparent juice gets its? signature ruby colour from contact with the grape skins during fermentation in vats. Magical!
Just as each hillside and each plot are different, so is the wine coming from them, created from the diversity of the soil.

Eighth stop :Colorful bubbles
Effervescence is an original way of developing Burgundy wines. Savigny is one of the first villages where, in the mid-nineteenth century, the champagne method is implanted. The Crément de Bourgogne, made from several different grape varieties ( pinot noir, chardonnay, and aligoté) is the delicious product of this traditional method.
